INDIAN SQUID CURRY

Ingredients

  • 4 thinly sliced shallots
  • 4 T curry powder
  • 1 sprig curry leaves
  • 1 t spice mix of fenugreek, black mustard, cumin, and fennel seeds
  • 1 wedged tomato
  • 5.6 oz coconut milk
  • 4 sliced hard-boiled eggs
  • 2 cups water
  • 1 lb cleaned squid
  • chili oil
  • salt
  • cooked rice

Directions

  • Saute shallots until fragrant; stir in curry powder, curry leaves, spice mix and tomato and cook 1 minute. Stir in coconut milk, eggs and water; boil gently 8 minutes. Add squid; boil 1 minute. Season with chili oil and salt; serve over rice.
