INDIAN SQUID CURRY
INGREDIENTS
- Cooking Time: 10 minutes

- Preparation Time: 5 minutes
- 4 thinly sliced shallots
- 4 T curry powder
- 1 sprig curry leaves
- 1 t spice mix of fenugreek, black mustard, cumin, and fennel seeds
- 1 wedged tomato
- 5.6 oz coconut milk
- 4 sliced hard-boiled eggs
- 2 cups water
- 1 lb cleaned squid
- chili oil
- salt
- cooked rice
DIRECTIONS
Saute shallots until fragrant; stir in curry powder, curry leaves, spice mix and tomato and cook 1 minute. Stir in coconut milk, eggs and water; boil gently 8 minutes. Add squid; boil 1 minute. Season with chili oil and salt; serve over rice.
