Why I Love This Recipe

This is a flaky sort of soda bread like the one my Grandma from Ireland used to make. Its best if eaten within 24 hours or you can freeze it for later. Enjoy!

Ingredients You'll Need

1-1/2 c. flour
1/2 c oatmeal
2-1/2 t baking powder
1/2 t baking soda
1/2 t salt
2 t caraway seeds
1 T sugar
1/3 c butter
1/2 currants or golden raisins
3/4 c buttermilk

375° oven

Stir oatmeal, flour, baking powder, soda, salt caraway seeds and sugar. Cut butter in to dry stir in raisins add buttermilk and blend. Knead gently 12 times right in the bowl. Shape into a round loaf and cut two 1/4 inch deep slits like a cross in the top of the loaf to bless the bread like my Irish Grandmother. Bake for 30 minutes.
