Italian Celery Salad
1 bunch celery
2 cups stuffed green olives in brine
Chop celery into 1/4" pieces and place in a bowl.
Add the olives and brine and stir.
Allow the mixture to sit in the fridge for 30 minutes.

My Italian father-in-law makes this for every special occasion. I love having it in the house as a salty snack or side dish/relish with lunch. Two ingredients -- couldn't be easier!
