1 ¼ pounds bulk Italian sausage (sweet or hot, your choice!)
1 large green bell pepper, coarsely chopped (about 1 1/2 cups)
1 large onion, coarsely chopped (1 cup)
2 (14 1/2-ounce) cans Italian-style stewed tomatoes, undrained
1 (15-ounce) can garbanzo beans (or white kidney beans)rinsed & drained
1 (8-ounce) can tomato sauce
1 cup shredded Mozzarella cheese -- (4 ounces)
Cook sausage, bell pepper and onion in Dutch oven over medium-high heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain.
Stir in tomatoes, beans and tomato sauce. Cook about 5 minutes, stirring occasionally, until hot. Sprinkle each serving with cheese. Yield: 4 servings.
