Italian Eggplant Relish

Ingredients

1 eggplant cut into squares
1 red bell pepper diced
2 celery stalks sliced
4 garlic cloves minced
1 medium onion chopped
6 TBSP of olive oil
1 cup marinara sauce *see recipe
2 oz. capers
salt to taste
parsley chopped to garnish


Preheat oven at 350 degrees.


In bowl mix eggplant, bell pepper, celery, garlic and onion then toss with oil.


Transfer to a baking sheet and bake for 30 minutes.


Take out of the oven, place in a pan and add the marinara sauce and capers then cook for 10 minutes.


Add salt to taste.


Let cool.


Place in a bowl and toss with parsley.


Pairs Well With


Notes

To be served as an appetizer with sliced french or pita bread.
