ITALIAN GREEN SAUCE

Ingredients

  • 1 slice French bread, crust removed
  • 2 tbsp. wine vinegar
  • 1 cup olive oil
  • 1 cup fresh parsley, minced
  • 1/4 cup red onion, minced
  • 1 egg, hard cooked and finely chopped
  • 2 garlic cloves, minced
  • 4 anchovy fillets, minced
  • 1/2 tsp. salt
  • 1/4 tsp. crushed red pepper

Directions

  • Soak bread slice in vinegar, then squeeze dry while reserving 2 teaspoons of the vinegar. Crumble bread into a bowl. Stir in reserved vinegar and remaining ingredients. Let stand for 20 minutes before using. Yields 1-1/2 cups.
