ITALIAN GREEN SAUCE
Italian Green Sauce

INGREDIENTS
- 1 slice French bread, crust removed
- 2 tbsp. wine vinegar
- 1 cup olive oil
- 1 cup fresh parsley, minced
- 1/4 cup red onion, minced
- 1 egg, hard cooked and finely chopped
- 2 garlic cloves, minced
- 4 anchovy fillets, minced
- 1/2 tsp. salt
- 1/4 tsp. crushed red pepper
DIRECTIONS
Soak bread slice in vinegar, then squeeze dry while reserving 2 teaspoons of the vinegar. Crumble bread into a bowl. Stir in reserved vinegar and remaining ingredients. Let stand for 20 minutes before using. Yields 1-1/2 cups.
