Italian Sausage Soup

Serves 12 | Prep Time | Cook Time

Ingredients

1 pound italian sausage
2 clove garlic cloves, choopped
1 large onion, chopped
1 - 28 oz can plum tomatoes, chopped
2 1/2 quarts beef broth
3/4 cup red wine
1 1/2 Tbsp chopped parsley
1 tsp dried basil
1/2 medium green pepper
2 cups cooked Bowtie pasta


Instructions


Break up sausage as you brown it along with the garlic and onion. When meat is browned, drain off excess fat. Add tomatoes, beef stock, wine, parsley and basil. Simmer for 30 minutes, stirring occasionally. Add green pepper and cook 15 minutes more. Add cooked pasta to the hot soup. Top with grated Parmesan Cheese if you’d like


Makes 12 servings.

Oooo - this sounds like a great recipe for snuggling up next to the fire with a big bowl. Just need a nice bread to dunk and I'll be in heaven. I just happen to have all the ingredients - YAY!!!
