JOHN'S MOJITO PIE

I some times feel like being creative, and I, for one, have always avoided Chifon Pies which take alcohol. But one day, not long ago, I decided to

test a theory..........

 


INGREDIENTS

  • Cooking Time: 10
  • Servings: 6
  • Preparation Time: 8
  • 1 envelope unflavoried gelatin
  • 2/3 cup sugar (or equivalent amount of subsititute)
  • 1/2 teaspoon salt
  • 3 slightly beat egg yolks
  • 1/2 cup lime juice
  • 1/4 cup water
  • 1 teaspoon grate lime peel
  • 4 drops green food coloring
  • 1/4 sparking mojito beverage
  • 3 egg whites
  • 1/3 cup sugar (or substitute)
  • 1 baked nine inch pie shell

DIRECTIONS

In a sauce pan, combine the first 3 ingredients. Stir in the egg yolks, lime juice and water. Cook and stir over medium heat until the mixture boils and the gelatin disolves. Remove from heat; add the lime peel and coloring. Cool to room temperature; stir in sparkling beverage. Chill until the mixture begins to thicken. Beat egg whites to soft peaks. Gradually add sugar' beat to stiff peaks. Fold in the gelatin mixture. Chill until mixture mounds. Pile into cooled pie shell and chill until firm. Top with whipped cream (or whipped topping) and candy lime slices (if desired).
