Jalapeno Corn Bread

Ingredients

1 cup cornmeal
1/2 cup shredded Cheddar cheese
2 teaspoons baking powder
3/4 teaspoon salt
2 eggs, beaten
1 (8 ounce) can cream-style corn
1 cup buttermilk
1/4 cup vegetable oil
1 tablespoon minced jalapeno pepper


In a bowl, combine cornmeal, cheese, baking powder and salt. Combine the remaining ingredients; stir into cornmeal mixture just until moistened. Transfer to a greased 9-in. square baking pan. Bake at 350 degrees F for 1 hour or until toothpick inserted near the center comes out clean.
