Jalepeno Creamed Spinach

Ingredients

2 packages (10-ounce) frozen leaf spinach
4 tablespoons butter
1½ tablespoons all-purpose flour
½ cup chopped onion
2 garlic cloves, minced
½ cup evaporated milk
¾ teaspoon celery salt
½ teaspoons celery salt
8 ounces Monterey Jack cheese, grated
1½ tablespoons minced, seeded fresh jalapeño pepper
Black pepper, to taste
½ cup Ritz crackers, crushed


1. Preheat oven to 300 degrees.


2. Cook spinach and drain, reserving 1 cup spinach liquid.


3. Melt butter in a saucepan and add flour; blend and cook a little – do not brown. Add onion and garlic,


stir briefly. Slowly add spinach liquid, followed by evaporated milk, celery salt, cheese, and jalapeño.


Season with salt and pepper then add spinach; cook until well blended.


4. Turn mixture into a buttered casserole and top with crushed Ritz crackers; bake 45 minutes.
