This cake is a family recipe that originates from my Aunt Judy's best friend Jane Miller. For a long time we called it Jane's Cake but through the years it has been shortened to simply "Jane Cake".

  • 2 Cups Flour
  • 1-1/2 Cups Sugar
  • 1/2 Cup Shortening
  • 1 Cup Milk
  • 2 Eggs
  • 2 tsp Vanilla
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • For Glaze:
  • Powdered Sugar (to desired consistency)
  • 1 Tbs margarine or butter melted
  • 1 tsp Vanilla
  • 2 Tbs Milk

  • Beat sugar and shortening until fluffy. Add eggs, vanilla and beat. In a separate bowl, add baking powder to flour and mix. Add flour mixture and milk alternately to sugar/shortening/egg mixture. Bake at 375 degrees F for 20-25 minutes in a jelly roll pan sprayed with a non-stick spray. While baking mix together margarine/butter, milk and vanilla in a bowl adding powdered sugar to desired glaze consistency (some like it thin, some thicker). After baking, while cake is still hot, poke with fork and pour glaze on cake.
