Ingredients

1 lb. ground beef
1 (14-oz) can crushed tomatoes
1 (14-oz) can diced tomatoes with herbs
1 (14-oz) can red kidney beans, drained
1 (14-oz) can black beans, drained
3 T. tomato paste
4 c. water
1/2 c. roasted red bell peppers
1 c. frozen corn
Bay leaf
1 t. Penzey's Southwest seasoning
1 t. red chili pepper
1 T. salt
1 t. pepper
1 dried guajillo pepper
1 T. oregano


In a large stockpot, brown ground beef. Add next 8 ingredients (through corn) and bring to a boil. Reduce to a simmer and add remaining ingredients. Simmer until thick, about 45 minutes.
