JENN'S CHILI

Ingredients

  • 1 lb. ground beef
  • 1 (14-oz) can crushed tomatoes
  • 1 (14-oz) can diced tomatoes with herbs
  • 1 (14-oz) can red kidney beans, drained
  • 1 (14-oz) can black beans, drained
  • 3 T. tomato paste
  • 4 c. water
  • 1/2 c. roasted red bell peppers
  • 1 c. frozen corn
  • Bay leaf
  • 1 t. Penzey's Southwest seasoning
  • 1 t. red chili pepper
  • 1 T. salt
  • 1 t. pepper
  • 1 dried guajillo pepper
  • 1 T. oregano

Directions

  • In a large stockpot, brown ground beef. Add next 8 ingredients (through corn) and bring to a boil. Reduce to a simmer and add remaining ingredients. Simmer until thick, about 45 minutes.
