Jeweled Brownie Cheesecake
3/4 cup butter or margarine
4 sq. (1 oz. each) unsweetened backing chocolate
1-1/2 cups sugar
4 large eggs, divided
1 cup all-purpose flour
1-3/4 cups M & M chocolate mini baking bits
1/2 cup chopped walnuts, optional
1 pkg. (8 oz. each) cream cheese, softened
1 teaspoon vanilla extract
Preheat oven to 350ºF. Lightly grease a 9-in. springform pan; set aside. Place butter and chocolate in large microwave-safe bowl. Microwave on HIGH 1 minute; stir. Microwave on HIGH an additional 30 seconds; stir until chocolate is completely melted. Add sugar and 3 eggs, one at a time, beating well after each addition; blend in flour. Stir in 1-1/4 cup M&M's chocolate mini baking bits and nuts, if using; set aside.
In large bowl beat cream cheese, remaining 1 egg and vanilla. Spread half of the chocolate mixture in prepared pan. Carefully spread cream cheese mixture evenly over chocolate mixture, leaving 1-in. border. Spread remaining chocolate mixture evenly over top, all the way to the edges. Sprinkle with remaining 1/2 cup M&M's chocolate mini baking bits.
Bake 40 to 45 minutes or until firm to the touch. Cool completely. Store in the refrigerator in tightly covered container.
