Jicama hash

Just a spin on hash browns using jicama root; its taste is slightly sweet, so it goes really well with sweet onion and would work well to compliment, oh say, a spicy sausage.

 


INGREDIENTS

  • Cooking Time: 30
  • Servings: 4
  • Preparation Time: 10
  • Cooking spray or olive oil
  • 1 Jicama root
  • 1/2 Sweet onion
  • 1/2 Red bell pepper
  • 2 tsp minced garlic
  • 1/2 tsp turmeric
  • dash each of thyme, parsley
  • black pepper, salt to taste

DIRECTIONS

Heat a tiny amount of oil in a pan (just enough to cover surface)



Peel and slice the jicama root; add to pan, and let sit on medium-high heat for 5 or so minutes until somewhat browned



In another pan, saute the onion, red pepper, and garlic



Stir the jicama root and let sit for another 5 to 10 minutes; add the turmeric and salt



Add the sauteed onion, red pepper and garlic to the jicama; add thyme, parsley, black pepper, and serve



Goes great with scrambled eggs and sausage (or tofu and soysage ;) )
