JOANNE'S SLAB APPLE CAKE (LIKE A PIE)

Ingredients

  • crust:
  • 3 c. flour
  • 1/2 t. salt
  • 3 T. sugar
  • 1 t. baking powder
  • 1 c. soft shortening
  • 2 egg yolks
  • 8 T. water
  • filling:
  • 14-16 tart apples
  • 2 T. flour
  • 1 1/2 -2 c. sugar
  • 1/2 t. cinnamon
  • 2 T. butter
  • 2 T. lemon juice
  • Powdered Sugar Glaze:
  • 2 c. powdered sugar
  • 1 t. softened butter/margarine
  • 4 t. warm water

Directions

  • Mix dry ingredients until well blended.
  • Cut shortening into flour mixture.
  • In separate bowl mix egg yolks and water.
  • Add to flour mixture and mix until dough forms a ball.
  • Form two balls and roll out.
  • Place one layer in jelly pan for bottom layer.
  • Pare, quarter and core apples.
  • Arrange on bottom crust.
  • Blend flour and sugar and cinnamon.
  • Sprinkle over apples.
  • Dot with butter and lemon juice.
  • Put upper crust on and pinch edges together.
  • Put slice marks in top.
  • Bake at 350 degrees for 1 hour.
  • Ice cooled cake.
