Judy's Carrot Cake
2 cups sugar
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
4 teaspoon cinnamon
1 cup oil
3 cups shredded carrots (about 1lb carrots shredded)
1 teaspoon of vanilla
3/4 cup raisins
3/4 cup chopped pecans (optional)
Cake: Combine sugar, flour, baking soda, salt, cinnamon
Add oil, eggs, shredded carrots, vanilla, raisins and pecans
Grease 2 9" layer pans. Line the bottom of each with waxed paper, then grease the paper.
Divide the batter between the 2 pans. Bake at 350 degrees for 25-40 minutes until the cake springs back.
