Judy's Potato Salad

Serves | Prep Time | Cook Time


2 lb Potatoes, Peeled & Diced
2-3 Hard Boiled Egg, Diced
6 or so Dill Pickles, Diced (or use the spicy little pepper ones and use 10-12)
2 Tbsp Dill Relish
1 Tbsp Mayonnaise
2 Tbsp Mustard
1 Tbsp Dill Pickle Juice
Black Pepper
Dill Weed
Dry Mustard Powder
Ground Red Pepper

*Boil potatoes in water until soft, about 20-30 minutes

*Drain potatoes and add diced eggs, pickles, and relish

*Add mayo and mustard and then cover top of salad with black pepper, dill weed, and very very lightly dust with ground red pepper...add a touch of dry mustard and salt

*Mix well and once cooled check if you need to add more of anything - it is all by taste pretty much on how much of what to add

Recipe Tips:

*Honestly the ingredient amounts are a complete guess - it should have enough mustard that it is really yellow and only enough mayonnaise that it isn't dry...I usually just keep adding stuff until it tastes right
