KöRöZöTT [CHEESE BUTTER SPREAD]

Ingredients

  • - 225 grams cottage cheese or fresh ewe's cheese
  • - 100 grams soft salted butter
  • - 1 tablespoon hot French mustard (Grey Poupon)
  • - 2 teaspoons mild paprika powder
  • - 2 à 3 anchovy filets, finely chopped
  • - 2 teaspoons capers, drained and chopped
  • - 2 teaspoons caraway seed, crushed

Directions

  • 1 Drain the cheese and keep the liquid
  • 2 Press the cheese through a colander
  • 3 Mix thoroughly with the butter
  • 4 Add mustard, anchovy, paprika powder, capers and crushed caraway seeds, mix again
  • 5 Add salt to taste
  • NB. If the mixture turns out to be to thick, add a dash of beer or some of the drained cheese liquids

Notes

Not quite sure where I got this recipe, it could be Hungarian, but I love it on brown bread.
