Kale - 1 bunch ( 4 to 5 big stems)
Onion - 1 medium
Green Chili - 2 small
Garlic - 1 Tbsp ( minced)
Chana Dal - 1 Tbsp
Urad Dal - 1 Tbsp
cumin seeds - 1 tsp
mustard seeds - 1 tsp
salt - 1tsp
black pepper - 1/4 tsp
Oil - 1 tbsp
Trim the thick stems (with out leaves) at the bottom. and separate the leaves from the stem in the medium part. chop the leaves along with stem on the edge. wash them and drain them and keep it ready.
Heat the oil in nonstick - pan.
Once the oil is hot, add Chana dal, followed by Urad dal. wait until they turn light golden color. Then add cumin seeds and mustard seeds.
Add chopped or minced garlic and saute for 1 min.
Add green chili, followed by chopped onion. Saute for 2 to 3 min, until the raw smell goes away. Add black pepper to onion mix.
Now add the Kale to the pan. and stir-fry it on high for 2 min, until the leaves wilts. add salt. and saute for 2 more minutes. taste and adjust all the seasonings.
Turn off the heat and transfer to serving Bowl.
Serve with hot white rice and taste the yumminess... of this nutritious green...!!
