Why I Love This Recipe


Ingredients You'll Need

Crust:
1-1/2 cup graham cracker crumbs
1/4 cup brown sugar
6 tablespoons. butter, melted
Filling:
4 pkg. (8 oz each) cream cheese, softened
1 cup sugar
4 eggs
1-1/2 tablespoons flour
1/4 cup Kahlua
1 pkg. caramels
Amarula liqueur


Directions

Run graham crackers through food processor until finely ground. Mix with melted butter and brown sugar. Press into 9" or 10" springform pan. Bake at 325 F for 10 minutes. Set aside. Unwrap 1 bag of caramels and melt in microwave according to package. Thin melted caramels with Amarula liqueur to consistency you desire. Set aside. Beat cream cheese, sugar, flour and vanilla with electric mixer on medium speed until well blended. Add Kahlua. Add eggs one at a time, mixing on low speed after each addition until blended. Pour half of batter in prepared crust. Drizzle 1/2 to 3/4 of caramel mixture over batter (refrigerate remaining caramel mixture). Pour remainder of batter over this. Place springform pan in water bath. Bake at 325 F for 55 to 60 minutes or until center is almost set. Do not overbake. Cool for at least 1 hour on wire rack. Run knife around rim to loosen cake. Refrigerate 4 hours or overnight. When ready to serve remove rim and drizzle with the remaining caramel mixture.
