- Cooking Time: O minutes
- Servings: 4-6
- Preparation Time: 10 minutes
- 2 Green Peppers
- 3 Tomatoes
- 2 Cucumbers
- 1 medium Red Onion
- Kalamata Olives
- 1 package Feta Cheese
- 1 can Anchovies
- Olive Oil
- Balsamic vinegar
- Lemon Juice
- Olive Juice
- Garlic salt
- Salt and Pepper
- Cut up all ingredients and mix in a bowl.
- Top with a mixture mostly of Olive oil and vinegar adding the remaining spices and juices to taste.
- I also like to add some anchovy oil from the can.
NotesMy Dad always made this growing up, I tweaked the dressing a little bit to make it my own. Also works well with a reduced fat feta cheese quite well.
