KELLY'S CHOCOLATE MOCHA MERINGUE DROPS

Ingredients

  • 4 egg whites, room temperature
  • 2 1/2 c powdered sugar
  • 1/2 c unsweetened cocoa powder
  • 2 T flour
  • 3 t instant coffee powder
  • 1 T bottled water

Directions

  • Beat egg whites on low until frothy, about 2 minutes
  • Add powdered sugar, cocoa powder, flour, coffee, and water
  • Beat on low until combined, then turn to high
  • You want egg white mixture to be glossy and marshmallow fluff thickness, about 3-4 minutes
  • Drop heaping teaspoons onto parchment lined cookie sheets
  • Bake at 350 degrees for about 15 to 18 minutes, or until tops crack

Notes

These meringue cookies are really good, and I didn't change much for my taste - I love mocha flavored anything - so these are right up my alley!
