Key Lime Cheesecake
1 1/2 cup graham cracker crumbs
2 tbsp sugar
1/4 cup butter, melted
2 1/2 8oz. Pkgs. Cream cheese
3/4 cup sugar
1 cup sour cream
1 cup sauerkraut - well drained
3 tbsp flour
3/4 cup lime juice
1 tsp vanilla
3 drops green food coloring
Blend ingredients together.
Butter bottom and sides of springform pan, then put crust mixture in bottom and 1/2" up sides.
Bake crust at 350F for 8 minutes, then let cool.
Beat cream cheese, sugar, and sauerkraut in food processor until very well combined.
Add sour cream, flour, and eggs, one at a time; blend until combined.
Blend in lime juice, vanilla, and green food coloring until smooth.
Pour into crust.
Bake at 375F for 15 minutes, reduce temp. to 250F and bake for 1 hr., or until center is barely set.
Cool, then chill 8 or more hrs.
