Key Lime Pie
1 (14-ounce) can condensed milk
½ cup sugar
3 eggs, separated
½ cup key lime juice (fresh is best)
1 prepared graham cracker crust
1. Combine condensed milk, sugar, egg yolks, and lime juice in a blender; blend for several seconds then pour into crust.
3 eggs whites
6 tablespoons sugar
½ tablespoon vanilla
1. Preheat oven to 425° F.
2. Beat egg whites until soft peaks form; add vanilla to the egg whites, turn the mixer to a higher speed and gradually beat in the sugar, 1 tablespoon at a time, until stiff.
3. Spread meringue on top of the filling then bake for 3 to 4 minutes, or until peaks begin to brown.
4. Let cool then cover and refrigerate for at least 4 hours before serving
