Kick-Butt Chili

Serves | Prep Time | Cook Time


1 lb ground beef
1 lb cubed beef
3 onions - chopped finely
6 cloves garlic - minced
6 T chili powder
1 jalapeno - seeded and minced
3 roasted peppers - seeded and minced
2 t ground coriander
2 T ground cumin
1 T paprika
2 C beef stock
12 oz dark beer (Guinness Black Lager)
28 oz canned tomatoes with liquid
15 oz black beans with liquid
15 oz pinto beans with liquid
1 T masa (corn flour)

Brown beef in cast iron skillet in batches, drain fat and set meat aside.

Saute onions, jalapenos and peppers until translucent (5-8 minutes)

Add garlic and saute for one additional minute

Add beef back to pot with vegetables

Add tomatoes with liquid

Add beans with liquid

Add beer and stock

Add spices

Bring to boil, reduce heat and cover

Simmer for one hour

Add masa and simmer for 10 additional minutes
