Kicked up Carbonara with penne
1 lb penne pasta (any pasta will do though)
2 tbs of oil
4 oz of bacon chopped up
4 cloves gaarlic finely chopped
2 large eggs
1 cup grated pecorino romano cheese
Itlaian flat leaf parsley chopped
1 small onion chopped
1 red bell pepper chopped
8 oz of fresh baby spinach
Boil water and cook pasta. Reserve 1 cup of the water.
Meanwhile, using a large skillet
Heat olive oil and cook the bacon.
add the onion and red bell pepper and cook till soft
throw in the spinach and cook till wilted
add the garlic and cook less than a minute
Add the pasta to the pan and coat well with all the ingredients
In a small bowl beat the eggs and cheese together really well, if it seems a bit thick you can add a bit of water or milk
Remove the pan of macaroni from the heat.
Slowly add the egg mixture to the pan and stir quickly and a lot
Add as much of the reserved pasta water as you need to get the cosistancy you like, it should be creamy.
Add lots of black pepper and garnish with the chopped parsley.

I learned how to make carbonara a long time ago..its pure comfort food in my book. As with most recipes, I like to add a twist to it. This is a simple fast and delicious meal!
