Killer Dark Chocolate Thins
2 cups flour
3/4 cup Dutch process cocoa
1 tsp. baking soda
1/2 tsp. salt
1 1/4 cups unsalted butter @ room temp.
2 cups sugar (*plus extra for dipping)
2 eggs @ room temp.
2 tsp. vanilla
Preheat oven to 350 degrees & line baking sheets with parchment.
Cream butter & sugar until light; add vanilla. Whisk dry ingredients together, add to creamed mixture. Mix until just combined.
Cover and chill for one hour until firm.
Roll into 1" balls; roll in sugar.
Bake on parchment-lined sheets 8-12 minutes or until firm.
Cool on pan 5 minutes before moving to cooling rack.
