3 Boneless, Skinless Chicken Breasts
1 bowl Extra Virgin Olive Oil (optional - for marinating)
2 tbsp minced Thyme
2 tbsp minced Parsley
2 tbsp Chili Powder
2 tbsp Crushed Red Pepper
2 cups white rice
2 cups of mixed veggies of your choice
In a rice cooker, add rice, water and vegetables. while this cooks move on to preparing chicken
in a bowl, mix extra virgin olive oil, thyme and parsley
bowl should be filled approx. halfway (make room for chicken)
Slice Breasts into cubes approx. 1 inch in diameter
Preheat skillet to medium/high heat
Place chunks into oil/seasoning mixture and mix with your hands until the chunks are evenly covered with seasoning.
Place chunks in pan and distribute them evenly
cover pan and allow to chunks to cook for 5 min, then stir and repeat
after about 17 min or until chicken is nearly finished, add chilli powder and red pepper
allow chicken to cook for about 5 more minutes, stirring often to mix seasoning well, then remove from heat and remove chicken from pan. pour broth over rice/veggies in a bowl and mix well.
Serve Chicken, rice and vegetables together and play your favorite movie : )
