KIRMANUEL CHICKEN

Ingredients

  • 3 Boneless, Skinless Chicken Breasts
  • 1 bowl Extra Virgin Olive Oil (optional - for marinating)
  • 2 tbsp minced Thyme
  • 2 tbsp minced Parsley
  • 1 Lemon
  • 2 tbsp Chili Powder
  • 2 tbsp Crushed Red Pepper
  • 2 cups white rice
  • 2 cups of mixed veggies of your choice

Directions

  • In a rice cooker, add rice, water and vegetables. while this cooks move on to preparing chicken
  • in a bowl, mix extra virgin olive oil, thyme and parsley
  • bowl should be filled approx. halfway (make room for chicken)
  • Slice Breasts into cubes approx. 1 inch in diameter
  • Preheat skillet to medium/high heat
  • Place chunks into oil/seasoning mixture and mix with your hands until the chunks are evenly covered with seasoning.
  • Place chunks in pan and distribute them evenly
  • cover pan and allow to chunks to cook for 5 min, then stir and repeat
  • after about 17 min or until chicken is nearly finished, add chilli powder and red pepper
  • allow chicken to cook for about 5 more minutes, stirring often to mix seasoning well, then remove from heat and remove chicken from pan. pour broth over rice/veggies in a bowl and mix well.
  • Serve Chicken, rice and vegetables together and play your favorite movie : )
  • (movie is required!)
