2 cups shredded, peeled kohlrabi stem
1/4 cup radishes or white turnips (rabioles), sliced or cut in matchsticks
2 cups of lettuce
1 cup of arugula salad
2 Tbsp freshly squeezed lemon juice
1/2 tsp Dijon mustard
1/4 tsp sea salt
4 Tbsp oil (sunflower, etc.)
Pepper, to taste
In a bowl, combine kohlrabi, radishes, lettuce, and arugula.
Combine the lemon juice, mustard, sea salt and oil in a jar. Shake thoroughly and add to salad. Season with salt and pepper.

Just throw in whichever veggie you have at hand and use the following dressing or the dressing of your choice! Kohlrabi is quite mild and goes well with an array of dressings!
