KOLLA´S MEXICAN MEAT BALLS

Kolla´s Mexican Meat Balls

INGREDIENTS

  • 1 kg minced beef
  • 1 big onion finely chopped
  • 2 garlic cloves
  • 60g crushed sliced almonds
  • 60g fresh bread
  • bread crumbs
  • 1 egg
  • 1tsp cround coriander
  • 3/4 tsp cinnamon powder
  • 1-2 tbsp red wine vinegar
  • 1 handful salt
  • black pepper (in a mill turn 10 times)
  • mix this together in a bowl. The bread crumbs are great to use to avoid the dough to be too moist.
  • Make little meatballs, and add to sauce:
  • 1tbsp vegetable oil
  • 1 big onion
  • 1 garlic clove
  • 1 tsp brown sugar
  • 2 tins (400g each) whole tomatoes
  • 1 green pepper/paprika
  • 1 red pepper/paprika both sliced in bigger mouth bits
  • pinch of cayenne pepper powder
  • pinch of red chilli powder
  • 1 tsp sweet paprika
  • 1 tsp coriander powder
  • beef stock for like 1/2 liter water, just the stock though
  • 1-2 tbsp red wine vinegar
  • salt and pepper to taste.

DIRECTIONS

Start by frying the onion and garlic in the oil, then add the rest, let simmer while making the meat balls.


When the whole dough has been added, let simmer for like 20 min.


Serve with boiled rice, like Basmati.


It is good to moisten the rice in cold water. Then put some oil in a pot, add some salt and some coriander powder, then the dripped rice and fry for a few minutes til they start to scent lovely, then add the water. like almost twice as much than the amount of rice. Then simmer til ready.


Good idea is to make a guacamole to serve with this dish, but is not necessary.
