Kris's Mad Oatmeal Cookies

Serves 25 cookies, depending on | Prep Time 30 minutes | Cook Time 10 minutes


1 c butter-softened
1 c sugar
1 1/4 c packed brown sugar
2 eggs
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
3 c quick cooking oats
1 1/2 c raisins
1 1/2 c all purpose flour

Preheat oven to 350.

Grease a cookie sheet with butter.

In a large bowl, beat butter and sugar until creamy.

Add the eggs,vanilla, flour, salt, baking soda and baking powder. Mix well. STIR in the oats and raisins.

Take a heaping tablespoon of dough and roll it into a ball, place it on the cookie sheet and smash it slightly with the bottom of a cup.

Continue with the remainder of the dough, forming cookies, 1 inch apart. Cook 10 min in the preheated oven or until the edges JUST START to brown. The cookies will appear not done, but once they cool, the will be chewy and moist.

Remove from cookie sheet immediatly, to the counter or a cooling rack with a spatula.

The name tells it all. My husband told me, after we had just been arguing, to "Make him some cookies!" Well, I was so mad and I just threw these together. He ended up telling me they were the best cookies he ever had and so that is where the name came from. Well, if they are the best ever, I should share.
