Kris's cheessy potatoes
3 lbs. potatoes peeled and boiled
1 c. sour cream
1 can cream of mushroom soup
2 c. grated mild cheddar cheese
2 diced green onions
salt & pepper to taste
1/4 -1/2 c. bread crumbs
Mix sour cream, soup, 1 cup of cheese, onions , salt & pepper in a large bowl. Then gently fold in potatoes.
Pour into a 13x9x2 baking pan that has been sprayed with a non-stick cooking spray.
Sprinkle top with remaining cheese and bread crumbs.
Bake in preheated 350 oven for about 30 minutes or til hot and bubbly.
