LEMON AND ONION ROASTED POTATOES
4-5 large baking potatoes (about 2 pounds)
2 tablespoons olive oil
2 medium red onions, peeled and cut into quarters
1 large lemon (or 2 small lemons), cut into 6 wedges
Salt and pepper, to taste
Preheat the oven to 325°Peel the potatoes. Cut into equal-size pieces for roasting,
and dry them thoroughly on paper towels. Arrange the potatoes on a roasting pan and drizzle with the olive oil. Add the wedges of onions and lemons and mix the vegetables together, keeping the onion pieces as whole as possible. Season well. Roast for 1 to 1-1/2 hours until the potatoes are crisp and golden.
