½ cup butter
1 cup flour
¼ cup powdered sugar
1 tps grated lemon zest
1 cup sugar
2 Tsp flour
1 ½ Tbs lemon juice.
Mix first four ingredients together and pat into greased 8” square pan. Bake 20 minutes at 325* .
Remove from oven and allow to cool slightly.
Beat together remaining ingredients and spread on top of prepared base. Return to oven and bake for 25 minutes at 325*
Allow to cool.
Sprinkle with powder sugar and cut into squares. Garnish with a lemon twist and a sprig of mint.
Another twist on this one is to spread thinly sliced mangos over bottom crust, and cover with the egg mixture. Takes a little longer to bake.
