LEMON MUFFINS WITH PLUM AND ICING
Ingredients for batter:
• 180 g flour
• 2 eggs
• 150 g sugar
• pinch of salt
• 2 teaspoons baking powder
• 100 g butter
• 100 g plain yogurt
• ½ teaspoon vanilla extract
• 10 plums
• zest of 1 lemon
Ingredients for icing:
• 100 g powdered sugar
• 2 tablespoons lemon juice
Preheat the oven to 200 C | 390 F. Finely slice the plums after you remove the pits. Whisk butter (room temperature) with sugar, salt and zest until it is white. In a separate bowl whisk eggs and vanilla extract until stiff. Combine both mixtures, add yogurt and mix again thoroughly.
Mix flour and baking powder and sift them into the batter. Add plums and carefully mix all the ingredients.
Put the batter into greased molds lined with parchment paper. Bake for 30-40 minutes until ready. Leave to cool and unmold the muffins on the wire rack.
For icing sift powdered sugar and whisk thoroughly with lemon juice. Glaze the muffins and leave to cool completely.
