LEMON-SPLASHED SHRIMP SALAD

Ingredients You'll Need
8 cups water
2/3 cup uncooked rotini
1 1/2 lbs peeled and deveined large shrimp (uncooked)
1 cup halved cherry tomatoes
3/4 cupsliced celery
1/2 cup chopped seeded poblano pepper
1/2 cup chopped avocado
2 tbsp chopped fresh cilantro
2 tsp grated lemon rind
3 tbsp fresh lemon juice
2 tsp extra virgin olive oil
3/4 tsp kosher salt
Bring 8 cups water to a boil in large sauce pan.
Add pasta to boiling water and cook 5 minutes or u til tender.
Add shrimp; cook 3 minutes or until done.
Drain. Rinse pasta and shrimp in cold water; drain well.
Combine pasta mixture, tomatoes, and the remaining ingredients.
Toss well and serve.
