Seltzer Or Mild Mineral Water
Mint Leaves For Garnish, Optional
Strip zest from lemons with vegetable peeler and place in small nonreactive saucepan. Add water to cover and place over low heat to warm mixture gently to about 130 degrees. Do not allow to become too hot.
Remove from heat. Cool. Strain liquid into pitcher. Squeeze lemons and strain juice. Add to pitcher with about 1/4 cup sugar.
Taste. It should be strongly sweet/tart in flavor. Cover and chill.
To serve, add 1 quart seltzer water to pitcher and taste. Add more seltzer to taste. Serve in tall glasses garnished with sprigs of mint.
