LENTIL - BARLEY STEW

Ingredients

1 medium onion, chopped
1 clove garlic, minced
8 to 12 c. water
1 c. barley (dry)
1 1/2 c. lentils (dry)
2 tsp. each of basil, thyme,
oregano, parsley, bay leaf
3 large potatoes, unpeeled
2 to 3 carrots, chopped
green peas or other fresh or
frozen vegetables, if
desired
1 can chopped tomatoes with
liquid
1 to 2 c. tomato juice



Simmer onion, garlic, barley and lentils in water for


approximately 1 hour. When barley is soft, add potatoes and


carrots. Add green vegetables last. Simmer until all vegeta-


bles are done. Add tomato juice. May sprinkle with celery


salt.
