Serves 30 balls | Prep Time | Cook Time

Ingredients

1 cup oatmeal
1/2 cup peanut butter (I use the entire small jar from AH)
1/3 cup honey (approx, use as much as you need to bind it together)
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips(if I don't have mini chips, I use half of a nice chocolate bar from Organic store)
1 tsp vanilla


Mix everything together in a bowl, chill for about an hour and roll into balls. You can store them in a tupperware container for a week in the refrigerator. Great for a quick snack on the run, or for kids after sports, etc.
