  • 2 cups chocolate graham cracker crumbs
  • 1/2 cup butter melted
  • 1/2 tsp cinnamon
  • 2 tbs heavy whipping cream
  • 2 tsp instant coffee granules
  • 2[8 oz] pkg cream cheese softened
  • 1/2 cup sugar
  • 3 eggs
  • 1/2 tsp vanilla
  • 1/3 cup heavy whipping cream
  • 1/2 cup semi sweet chocolate chips


  • Heat oven to 350
  • Mix crumbs melted butter and cinnamon and press onto bottom of an ungreased 13x9" baking pan[you must use this size for the bars to turn out properly]
  • Combine 2 tbs whipping cream and coffee granules in a small bowl
  • Let stand 5 min until coffee dissolves
  • Combine cream cheese and sugar in a large bowl
  • Beat at med speed scraping bowl often until creamy
  • Add coffee mixture eggs and vanilla
  • Beat well scraping bowl often until well combined
  • Pour over crust and bake for 20-24 min or until center is nearly set
  • Cool on wire rack 1 hour
  • Place 1/3 cup whipping cream in a 1 qt saucepan
  • Cook over med heat until whipping almost comes to a full boil
  • Remove from heat and stir in chocolate chips until melted
  • Spread over cheesecake
  • Refrigerate until chocolate sets at least an hour better overnight.
  • Cut into bars.
