Laura Ingalls Wilder's Gingerbread
1/2 cup brown sugar, packed
1/2 cup shortening
1/2 cup molasses
2 Tsp baking soda
1 cup boiling water
3 cups flour
1 tsp each cinnamon, ginger, all-spice, nutmeg and ground cloves
1/2 tsp salt
2 well beaten eggs
Beat brown sugar and shortening until well blended.
Mix the molasses and baking soda in the cup of boiling water. Add to the sugar mixture, blending well.
Mix the flour and spices and salt together and add to the liquid mixture. mixing well.
Lastly add the eggs and mix well. Batter will be thin.
Put in a 9 inch baking pan.
Bake at 350 for 30 minutes.
Raisins or candied fruit may be added.
