Lavender Sponge Cake
6oz self raising flour
3oz lavender caster sugar
3oz caster sugar
1 tsp baking powder
1-cream margarine in a large mixing bowl with a hand held mixer
2- sift in dry ingedients, then tip the lavender flowers from the sieve in too
3- add eggs and mix very well to combine thoroughly
4- grease two sandwich tins with butter and divide the mixture equally
5- place into a pre-heated oven at 190c for 25-30mins until firm to the touch
6- remove from the oven and leave to rest in the tins for 5 mins
7- remove sponges from tins and cool completely on a wire rack
8- once cool, fill and decorate as you please-yum!

a slight adjustment to an ordinary vanilla sponge recipe, fabulously different!
