Lazy Lasagna Chili

Ingredients

1 cup Zucchini, Coarsely Chopped
1/2 cup Onion, Coarsely Chopped
1 lb Sweet Italian Turkey Sausage (4 Links)
2 Garlic Cloves, Crushed
26 oz Spaghetti Sauce
2 cans Beef Broth
1 cup Water
1 1/2 cup Uncooked Pasta Nuggets (radiatore)
2 Tbsp Snipped Basil (optional)


*Coarsely chop zucchini and onions using food chopper, set zucchini aside


*Remove casings from sausage, discard casings (skip this step if you find regular sweet turkey sausage)


*Heat 4 quart casserole over medium heat until hot


*Add sausage, onion, and garlic and cook 8-10 minutes or until no longer pink, breaking sausage into crumbles; drain


*Add spaghetti sauce, broth, and water and bring to a boil


*Stir in pasta, reduce heat to simmer, uncovered, 7 minutes


*Stir in zucchini into chili, cook 2-4 minutes or until zucchini is tender


*Remove from heat and stir in basil, if desired


*Ladle soup into bowls and serve with garlic crostini, if desired
