Lebanese Lentil Soup
Why I Love This Recipe
Another Lebanese family favorite that is great for leftovers!!
Ingredients You'll Need
2 cups black lentils
1 bunch swiss chard or celery
1 large white onion - chopped
1/4 cup lemon juice
1/3 cup olive oil
1/2 tbsp salt
pepper to taste
1.) Spread the lentils on a platter and pick them clean. Rinse and drain.
2.) Place the lentils and water into a large saucepan and place on
high hear to bring to a boil. Reduce the heat to medium and
cover the pan for 30-40 minutes or until the lentils are tender.
3. While the lentils are cooking, wash the celery, trim, and clean. Cut
pieces approximately 1/2in wide.
4.) Add the celery to the lentils and simmer another 5-10 minutes or
until the celery has softened.
5. Add the diced onions to a separate frying pan and saute them in
olive oil until partially transparent.
6.) Add the sauted onions to the lentil and celery minute along with
salt, sumac, and lemon juice. Simmer for an additional 5 min.

Pairs Well With
Pita bread that has been hardened in the oven! Add a squeeze of lemon to freshen it up!
