Leek and Goat Cheese Tartlets
Box of Tartlet Shells
1 bunch of leeks, white part only, sliced
3 Tbsp. butter
8 oz. goat cheese
2 eggs, plus 1 egg yolk
3/4 cup half and half
Salt and pepper
Pinch of grated nutmeg
1. Cook leeks in butter until very soft, but not brown. Preheat oven to 350.
2. In bowl, whisk together remaining items. Pour this mixture over the leeks and spoon into the tartlets.
Bake for 15 mins. till top is slightly brown.
