Lemon Blueberry Pizza

Lemon Crumb Crust:
1/2 cup butter -- melted
1 tablespoon lemon juice
2 1/2 cups graham cracker crumbs
250 g cream cheese
3 tablespoons icing sugar
2 teaspoons lemon rind -- grated
1 cup whipping cream
3 cups blueberries
1/2 cup sugar
3 tablespoons cornstarch
1 1/4 cups water
1 1/2 cups blueberries
1 tablespoon lemon juice

For Crust: In a bowl, combine butter and lemon juice.

Add crumbs and mix well.

Pat evenly over bottom and sides of 12" pizza pan. Bake at 350 oven for 5 minutes.

Let cool.

Filling: In a small bowl, beat cream cheese, icing sugar and lemon rind until fluffy.

With mixer at high speed, slowly pour in cream and beat until combined.

Spread cream mixture evenly over crust.

Top with berries.

Topping: In saucepan, combine sugar and cornstarch.

Stir in water and berries.

Cook over medium heat, stirring, until mixture boils and becomes thick and clear.

Remove from heat and stir in lemon juice.

Set aside to cool slightly.

Spoon slightly cooled topping over berries.

Cover and chill until set, about 1 hour.
