Why I Love This Recipe

My neighbor, who is like a grandmother to me, threw me a wedding shower when my husband and I got married 20 years ago. Each of the guests had to bring a recipe for me. This is the recipe I got from my neighbor.


Ingredients You'll Need

1 1/2 cups butter or margarine at room temperature
3 cups sugar
5 lg eggs
1 tsp vanilla
1/2 tsp lemon extract or 1 tsp lemon zest
1/2 tsp almond extract
7/8 cup ginger ale or similar soda


Directions

Cream butter until light. Cream in sugar, beat until fluffy. Beat in eggs one at a time. Beat in 1 cup flour then add extracts and a little ginger ale. Continue adding flour, alternating with ginger ale until all are used. Pour batter into 2 greased and Reynolds Parchment Paper lined 9x5" loaf pans, or 1 greased and floured 10" bunt pan. Bake 1hr 45 mins. (if using bunt pan, baking time will be slightly longer). Let cool in pan

There is no Temp listed or amount of flour. I made this as cupcakes with 2.5 cups of flour and baked them for 30-35 mins @ 350 degrees. They Are delicious!!
