Lemon Chicken Soup

1 1/2 tablespoon olive oil
12 oz skinless boneless chicken breast cut into bite sized pieces
1 med onion chopped
1/2 cup chopped celery
1 carrot chopped
1 tablespoon fresh thyme(1 teaspoon dried)
6 cups chicken broth
1 cup orzo (whole wheat if you can find it)
2 large eggs
5 tablespoons lemon juice
salt and pepper to taste

heat one tablespoon of oil in a soup pot over med heat. Season chicken with salt and pepper and cook for about 5 min until done. Remove from pot and set aside. Add remaining oil to pot and add the veg and thyme cook over med heat until veg is tender, about 5-7 min. Add 5 cups of the broth and bring to a boil. Add orzo and let simmer for 8 min. In the meantime heat the remaining one cup of broth in a small saucepan. When the orzo is done , beat the eggs in a small bowl and wisk in the lemon juice. Slowley add the warmed broth to the eggs wisking well. Add the mixture to the soup stirring well until the soup is somewhat thicker. Do not boil soup at this point. Add the chicken to the soup, season with salt and pepper.
