- 2 chicken breasts, pounded thin
- 1 cup chicken broth
- lemon juice
- lemon zest
- 1 tsp lemon pepper seasoning
- salt and pepper to taste
- 1 tbls olive oil
- Season chicken breast with the lemon pepper, and salt/pepper. Warm the olive oil in a large skillet. Place seasoned chicken breast in the skillet and sear on both sides.
- After a couple of minutes, carefully pour the chicken broth in with the chicken and cover. Drizzle with lemon juice, and turn after about 10 minutes. After ten more minutes, check for doneness and remove from pan. Sprinkle with a bit more lemon pepper seasoning and serve with rice.
NotesMy husband loves lemon chicken so we try to make this every couple of weeks! It's great on the grill also!
