Lemon Cream Cheese Bars

Serves 30 bars | Prep Time 40 min | Cook Time 45 min


2 cups all purpose flour
1/2 cup powdered sugar
2 sticks butter cut into chunks,chilled
Cream Cheese Filling:
1 8oz package cream cheese
1/2 cup powdered sugar
2 tbls flour
2 eggs
1 tsp vanilla
Lemon Filling:
4 eggs
2 cups granulated sugar
1/2 cup a.p.flour
1 tsp lemon zest
1/4 cup fresh lemon juice
powdered sugar for dusting

mix crust ingredients in mixer and mix until well blended,once mix is starting to stick together stop and press mix into a 151/2x101/2x1 pan and bake at 350 for 14 to 16 min until set,remove from oven,meanwhile clean mixer bowl and place cream cheese filling in mixer and mix until creamy about 3 min,pour over baked crust in an even layer,bake at 350 for 6 to 7 min until slightly set,meanwhile clean bowl again,add all lemon filling ingredients except lemon juice,mix on medium for 30 seconds,slowly add lemon juice until combined,slowly pour lemon mix over cream cheese mix,bake again at 350 for 15 min or until filling is set,let cool to room temp or chill,cut into slices and dust with sugar

this recipe came out of the cookbook that came with my kitchen-aid mixer,they are a little time consuming but worth the effort,when done right they have three nice layers

I have been baking these Lemon Cream Cheese Bars since I bought my Kitchenaid mixer 9 years ago. Anyone who tries them raves about them. I find that it takes at least 4 minutes more than the recipe states to bake the top layer until it is set.
